Ingredients

  1. 1breast of kid goat (the whole top part without breaking it) 
  2. 1/2 cupoil 
  3. 1medium onion, finely chopped 
  4. 2 cupsshort grain white rice 
  5. 2medium tomatoes, finely chopped 
  6. 1 cupparsley, finely chopped 
  7. 1 tsptomato paste 
  8. 1 1/2 cupwater (about) 
  9. salt 
  10. pepper
  11. cumin

Steps

  1. 1

    Put the oil in a large frying pan and sauté the onion. 

  2. 2

    Add the rest of the ingredients and cook for about 5 minutes over low heat, stirring constantly. 

  3. 3

    Sprinkle the kid goat with salt, pepper and cumin.

  4. 4

    Continue by stuffing the goat between skin and ribs with the stuffing you have prepared and seal it by sawing it.

  5. 5

    Place it in a pan with plenty of water and bake in medium oven (150-180 degrees) for 3 hours.
