Spread out the filo sheets in twos, brushing with butter in-between.

Fold in the middle and brush with butter once more

And then make a tight roll.

Brush the edge with water so that it seals well.

Place the rolls in the fridge so that they get firm.

Cut them into bite-sized pieces

And fry them until they are golden brown. Remove using a sifter ladle and place them on kitchen paper.

Prepare the syrup by boiling the ingredients for 5 minutes. Place the kourkoumpinia in the syrup, few at a time and leave for 2-3 minutes so that they absorb it well.
