Steps

Place the sugar and the water in a pot over low heat.

Mix until the sugar dissolves completely but WITHOUT allowing the syrup to come to the boil, then remove from heat.

Peel the fruits and remove the pit as well as the red part of the flesh that surrounds the pit. Place them in the jars.

Pour the ready syrup in the jars so that it covers the fruits.

Place a tall pot over heat with enough water to cover the jars when you put them inside.

As soon as the water starts boiling place -very carefully so that you don't get a burn- the jars in it.

Boil for 15΄- 25΄from the moment you place them in the pot and depending on how ripe the fruits are.

Set the pot aside and leave them in it for an additional 20΄.

Then remove them and as soon as they cool they are ready to store even outside the fridge.
