While looking for a recipe with lentils and rice, I found various. I put my imagination to work and this recipe is the outcome, you can serve it either as a salad or a main course.

Boil the lentils for a couple of minutes and set them aside for half an hour. Then, discard the water and rinse them.

Put some fresh water in the pot, add 1 bay leaf, a little rosemary, salt, the lentils and let them boil until they are tender (about 20 minutes).

Strain them keeping the water. Use this water to boil the rice adding a little more to make sure that the ratio of rice and water is right. Add a little salt. Let the rice boil but make sure you don't overcook it!

While the rice is boiling, finely cut the bacon and the onion and julienne the carrot. Place everything in a large frying pan, together with the corn and sauté well.

When the rice is done, add it to the lentils in the large frying pan and mix everything well.
