Finely chop the garlic and beat it well with the olive oil the zest and the spices in a bowl.

Set it aside for a while to allow for the saffron to dissolve and give your oil a nice red color!

Clean the fresh shrimp by slitting the backs (not too deep) and devein them leaving the head and the tail.

Place them in rows in a baking pan, pour the flavored olive oil over them, cover with cling film and set them in the fridge to marinade for about 2 hours.

Preheat the oven to 220°C and place the baking tray on a top rack with the grill on.

Bake each side for about 4-5' (you should turn them over in the baking tray carefully so that the heads don't fall off).

Serve in a platter sprinkled with dill all around (or parsley, whatever you have available) and red pepper for decoration..

The oil is very tasty and if you don't count the calories attack it with good bread!
