My husband walks into the kitchen and finds me pondering over something and taking notes! Without even asking what it's about, he just turns around saying "I see... I'm going to get figs!!!".

Wash the figs without peeling them, remove the stems, cut them into small pieces into a pot to which you add the sugar, the water, the grape must syrup and the lemon juice. Let everything simmer over moderate heat for 20 minutes stirring from time to time.

Allow the mixture to cool then place it into a food processor together with the heavy cream. Blend for 2-3 minutes and taste to see if its ok or you need to add grape must syrup or sugar accordingly).

Pour the mixture in an ice cream container and place it in the freezer.

Stir the ice cream hourly 2-3 times to avoid any ice crystals from forming.
