Pit the cherries using a cherry pitter. It would be best if you do that over the pot that you are going to make the spoon sweet in so that all the juices don't go to waste but instead contribute to the sweet.

Place alternating layers of cherries and sugar in the pot.

Set the pot aside covered for 5 hours.

Place the pot over strong heat and as soon as it boils for a couple of minutes add the blanched almonds and the rose geranium.

The sweet will start to foam. You don't skim off the foam, instead you just stir. The foam will subside in a while.

Count 7 minutes from the moment it starts boiling, stirring constantly.

When the 7 minutes have passed, turn off the heat, add the lemon juice and allow the spoon sweet to cool on the stove.

When it cools, store in sterilized jars.
