Fried rice actually comes from some character in Chinese culture, which does not like tasting cold food and also avoid having to dispose of leftovers a few days earlier. Hence, the cold rice that's fried to be served back at the dinner table. One of the typical kinds of fried rice is from Semarang, combined with chewy tripe make this into a special fried rice --- albeit with a simple seasoning composition.

While traveling or on the roads to the city of Semarang (Central Java), you will find stalls serving fried rice with tripe. Ingredients

  1. 500 grwhite rice
  2. 200 grtripe, boiled until soft and then cut to taste
  3. 3 tbspsweet soy sauce
  4. 2shallots, thinly sliced
  5. 1 clovegarlic, finely chopped
  6. 1leek, sliced medium
  7. 1 tspbouillon powder (beef flavor)
  8. 1/4 tsppepper powder
  9. to tasteSalt
  10. Oil for frying
  11. GROUND SPICES
  12. 4shallots
  13. 2 clovesgarlic
  14. 4red chillis
  15. 3cayenne peppers
  16. 1/2 tspshrimp paste, fried/grilled
  17. COMPLEMENTARY INGRED.
  18. Fried eggs
  19. Pickled cucumbers
  20. Crackers
  21. Fried shallots

  1. 1

    Heat the oil, then saute shallot and garlic until wilted.

    Put the ground spices, and cook until aromatic.

    Then add the tripe, cook until a little brown and slightly dried out.

    Then add the cooked rice, leek and sweet soy sauce. Stir so that the rice does not clump, and season mix well.

    Finally add in bouillon powder, pepper powder and salt. Stir, adjust the taste.
