Margherita Fritters: Batter-fried Tomato & Mozzarella Rings

Incidentally, when it comes to pizza, I like nothing more than the simple yet gorgeous Margherita. Garlic, tomatoes, basil and Mozzarella - enough to make those salivary glands work overtime. So I have taken these basic ingredients of the delightful Margherita and turned them into fritters with a crisp, egg-y coating.

The result is delicious. It takes little time to make. You could easily whip up a few for your guests this Diwali. The given ingredients yield about 15-16 fritters.

PS. If you do not want to use eggs you could make a batter using cornflour and rice flour.

Ingredients

  1. 4Large Tomatoes
  2. 3/4 cupGrated Mozzarella cheese
  3. 3-4 tablespoonsGrated Parmesan cheese
  4. 2 tablespoonsChili flakes
  5. 1 tablespoonDried Oregano & Basil
  6. 1 teaspoonMinced garlic
  7. to tasteSalt
  8. 1 teaspoonSugar
  9. ****
  10. For the batter :
  11. 2Eggs
  12. 4 tablespoonsCornflour
  13. 2 tablespoonsRice flour
  14. to tasteSalt and pepper
  15. Oil for deep frying

    Slice the tomatoes into rings, neither too thick nor too thin. 4 tomatoes should yield about 30-32 rings.

    Sprinkle salt and sugar and toss well. Keep aside for 5-7 minutes.

  3. 3

    In the meantime mix the Mozzarella, Parmesan, garlic, chili flakes, herbs (you can use a mix of oregano and basil).

  4. 4

    Now take two tomato rings. Place a generous amount of the cheese mix on one ring and cover with the other slice, like a sandwich.

  5. 5

    Prepare the batter by beating the eggs well and then whisking in the cornflour and rice flour along with the salt and pepper. The batter wont be to thick.

  6. 6

    Heat oil in a pan. Dip each tomato cheese into the batter and ease into the oil once its ready. Fry until a beautiful golden, on medium - medium low heat. Turn up the heat while taking the fritters out of the oil.
