Margherita Fritters: Batter-fried Tomato & Mozzarella Rings

Incidentally, when it comes to pizza, I like nothing more than the simple yet gorgeous Margherita. Garlic, tomatoes, basil and Mozzarella - enough to make those salivary glands work overtime. So I have taken these basic ingredients of the delightful Margherita and turned them into fritters with a crisp, egg-y coating.
The result is delicious. It takes little time to make. You could easily whip up a few for your guests this Diwali. The given ingredients yield about 15-16 fritters.
PS. If you do not want to use eggs you could make a batter using cornflour and rice flour.

Cooking Instructions
- 1
Slice the tomatoes into rings, neither too thick nor too thin. 4 tomatoes should yield about 30-32 rings.
- 2
Sprinkle salt and sugar and toss well. Keep aside for 5-7 minutes.
- 3
In the meantime mix the Mozzarella, Parmesan, garlic, chili flakes, herbs (you can use a mix of oregano and basil).
- 4
Now take two tomato rings. Place a generous amount of the cheese mix on one ring and cover with the other slice, like a sandwich.
- 5
Prepare the batter by beating the eggs well and then whisking in the cornflour and rice flour along with the salt and pepper. The batter wont be to thick.
- 6
Heat oil in a pan. Dip each tomato cheese into the batter and ease into the oil once its ready. Fry until a beautiful golden, on medium - medium low heat. Turn up the heat while taking the fritters out of the oil.

Margherita Pizza Margherita Pizza
I've never eaten or made this before and I was AMAZED at how delicious it was. Been wanting to try my hand at a margherita pizza forever and all I can say is.. Success! There aren't a lot of ingredients so it's important to get the ones you do use right. The key is the sauce and the main ingredient is definitely the fresh basil. I made my sauce a little different than most do and it worked out swimmingly. I'll for sure be making this many more times! Whitetrash Gastronome -

Margherita-style Toast Margherita-style Toast
I got the idea for this when I was making "Brandy's" Half and Half Pizza. I wanted to enjoy the taste of pizza Margherita for breakfast and also to use up leftover mozzarella.Make sure you use cherry tomatoes. They are sweet, and go well with the umami of the cheese and the basil, so you don't need seasonings. If you prefer a saltier taste, mix salt in with the olive oil before you spread it on the bread, or lightly sprinkle right before eating. Pizza Margherita Pizza Margherita
This recipe is the result of trying different recipes and reading their comments. It mostly tries to replicate the pizza Margherita served at Roberta’s, in Brooklyn, NY. In general, but especially in this pizza, the best ingredients make all the difference. Ricardo -

Squash blossom fritters Squash blossom fritters
As a child, I used to enjoy fresh pumpkin blossom fritters during the monsoon season. I have tried to recreate the recipe using squash blossom. The fritters go well as a snack with a cup of chai or as an accompaniment with khichdi. I used the leftover batter to make some cilantro fritters(the green ones). Priyanka Mitra -
