Miso and ginger salmon with cheesy mash

This is a super quick recipe for a tasty evening meal. Miso is great as a seasoning for marinades and sauces - I prefer white as it has a milder sweeter taste. I didn't have time to leave it marinating, but added some ginger and lemon and it was very tasty. I had some truffle cheese in the fridge so used that for the mash, but blue cheese would also work fine. If I'd had time I would have added sautéed onions to the mash, but this was a real rush job (as you might have gathered ;-) ).

Put the potatoes on to boil with a pinch of salt - the smaller the pieces, the quicker they will be done

When the potatoes are ready, add a knob of butter and the truffle cheese in pieces

Cover and leave to melt

Mis the miso, lemon juice, ginger and black pepper in a glass

Spread both sides of the salmon stakes and gently fry in a very small amount of oil in a non-stick pan. When the edge of the up-side starts changing colour...

... flip over and do the other side

Uncover the potato pan and the butter and cheese will have melted

Add the yoghurt and mash

Serve with a little salad on the side and a cool crisp glass of white wine. Enjoy!!!!!
