Zucchini & Tomato Saute

Most folks in the Southern USA fry everything. I try hard to avoid it, it's messy and stinky, although necessary for some dishes. I remember my mom cooking fresh zucchini and tomatoes in a sauce pan when I was a kid, and this is my re-interpretation for that dish. When pairing with mashed potatoes, the broth makes great gravy for the potatoes.

Add zucchini, peppers, celery, canned tomatoes and spices to saute pan, use vegetable broth to add moisture for saute

Saute on medium low for about 20 minutes, stirring every 5 minutes, adding broth when necessary

When the zucchini is tender, add butter and fresh chopped roma tomato, fold in till butter melts and tomato warms thoroughly, about 2 minutes

Place in serving dish and top with grated parmesan cheese
