Ingredients

  1. 2 tablespoonsunsweetened dark cocoa powder
  2. 1 teaspoongarlic powder
  3. 1 teaspoonMexican oregano
  4. 1/2 teaspoonchipotle chile pepper
  5. 1/2 teaspoonground cumin
  6. 1/2 teaspoonsalt
  7. 3-4 tablespoonsoil
  8. 2 poundsboneless beef chuck, cut into 1-inch cubes
  9. 1 cupchopped onion
  10. 1/2 cupred wine (Cabernet Sauvignon is a good option)
  11. 3 cupsbeef stock
  12. 6 ounces (1 can)tomato paste
  13. 1 cupflour (optional)

Steps

  1. 1

    Mix cocoa powder and seasonings in small bowl. Set aside

  2. 2

    Heat oil in large skillet on medium-high heat. Add 1/2 of the beef; brown on all sides. Remove beef from skillet. Repeat with remaining beef, adding additional oil as needed. [OPTIONAL] Toss the beef chunks in flour before searing. the flour will aid in developing a golden brown sear and help thicken the chili during the cooking process

  3. 3

    Heat remaining oil in same skillet on medium heat. Add onion; cook and stir 3 minutes (until slightly golden).

  4. 4

    Add spices and cook about 30 seconds. Cooking the spices in the skillet before adding liquid will help open up the bouquet

  5. 5

    Add red wine to deglaze the bottom of the pan, scraping up the browned bits into the chili

  6. 6

    Add beef broth and return beef (with juices) back to the pot

  7. 7

    Simmer uncovered from 1.5 - 4 hours (the longer it simmers the more flavor you will develop). If the liquid gets too low, add 1/2 cup additional beef stock as needed

  8. 8

    Serve over white rice topped with green onions and shredded cheddar cheese
