A traditional Moroccan dish: pieces of chicken cooked with olives and preserved lemon. Rich in cilantro and parsley flavors. Serve hot.

A traditional Moroccan dish: pieces of chicken cooked with olives and preserved lemon. Rich in cilantro and parsley flavors. Serve hot.
Cooking Instructions

Sauté the chicken pieces in the oil until golden brown, then remove from the pot and set aside.

Sauté the onion in the same pot until golden, then add the garlic and stir for 2 minutes. Add the cumin, turmeric, and black pepper, and stir the mixture again for 2 minutes. Then add half of the parsley and cilantro.

Add the chicken pieces and stir, then sprinkle with salt and let the mixture cook for 5 to 10 minutes.

Cover the chicken with water and let it cook over medium heat for 30 minutes.

While the chicken is cooking, cut the preserved lemon into quarters, remove the pulp, and chop the peel into small pieces.

Add the lemon juice and chopped preserved lemon peel to the chicken and cook for 20 to 25 minutes.

Then add the olives and cook for another 15 minutes.

If the sauce is not thick enough, remove the chicken pieces and let the sauce evaporate for a few minutes. Then return the chicken to the pot and turn off the heat.

When cooking is complete, add the remaining parsley and cilantro.

Serve the dish hot.

#nonindian - This is a signature dish of Morocco which is prepared in a special pan called the Tagine. Hence the name "Vegetable Tagine". It is very easy to cook. Healthy and nutritious, it is also hassle free, as you just need to arrange all the veggies in the tagine, drizzle some spices mixed with olive oil and cook, covered, on a low flame. It is that simple. No stirring required. So it is very good for the elderly and during pregnancy as it is slow cooked in steam. The veggies are cooked in steam and it can be relished with some plain steamed rice or paratha/ naan/chapatti for the Indian palate. But traditionally it is relished with some couscous. #nonindian - This is a classic Moroccan Dish where marinated lamb is slow cooked to perfection in a Tagine pot. This is my version of this popular cuisine, where I gave an Indian touch by adding some crushed kasuri methi and yoghurt. Rest of the spices used are very much a part of Moroccan cuisine. This is a yummy dish with a subtle flavour of the rose water, which can be substituted with saffron. There is a crunch to every bite with the presence of the dry fruits. Some sliced veggies like carrots and potatoes along with dates, prunes and apricots too, can be added. It is traditionally relished with couscous, but for the Indian palate rice or any Indian bread is perfectly fine. Bethica Das
