Good old Rissotto

I love love love rissotto and I like it just a bit thicker. Creamy without the cream just makes you warm from the inside out. There are many variations but this one works, Try going half and half on the stock with a good white wine.

I love love love rissotto and I like it just a bit thicker. Creamy without the cream just makes you warm from the inside out. There are many variations but this one works, Try going half and half on the stock with a good white wine.
Steps

Put oil in pan and add vegetables, fry till soft add rice and fry keep stirring until rice gives you a nutty aroma

In a separate pan heat water and add stock cubes boil and set aside

Add one soup spoon of stock at a time in you rissotto and stir constantly until water starts to reduce then repeat until all the stock is finished or until rice is firm to the bite and the mixture is creamy and three times in size.

Add butter and stir

Add parmesan if desired. I did

Serve hot and steamy
