“NASI GORENG KAMPUNG” is a typical kind of fried rice from the Riau Islands. It's also commonly found in Malaysia, because the people are still the same Malay family. Ingredients

  1. 300 grwhite rice
  2. 1egg, beaten, then fried and scrambled
  3. 4shallots, thinly sliced
  4. 2 clovesgarlic, finely chopped
  5. 1candlenut, shaved/puree
  6. 1/2 tspground pepper
  7. 1/2 tspdried shrimp paste, toasted
  8. 1 tspsweet soy sauce
  9. to tasteSalt
  10. Oil for frying
  11. SPRINKLED GARNISH:
  12. 10 granchovies, fried
  13. 5cayenne peppers (to taste), thinly sliced

  1. 1

    Saute garlic, shallots and candlenut until fragrant. Add white rice and egg, stir briefly.

    Add pepper powder, dried shrimp paste and sweet soy sauce. Stir so that all ingredients are well blended.

    Serve fried rice with a sprinkling of fried anchovies and sliced cayenne pepper.
