Ingredients

6 to 8 servings
  1. 2 tablespoonextra virgin olive oil
  2. 1/2large white onion, diced
  3. 1medium green zucchini, diced
  4. 4stems of brocoli, peeled & diced
  5. 1small cauliflower, diced
  6. Carrot leafs & stems from 2 bunch of garden carrots, chopped
  7. to tasteFresh ground black pepper
  8. 1 litervegetable broth
  9. 1/2 literwater

Cooking Instructions

  1. 1

    In a large pot, heat up the oil at medium/high heat and cook the onion for one minute, stirring often.

  2. 2

    Add the zucchini and cook for another minute, stirring often.

  3. 3

    Add the brocoli and the cauliflower and cook for another minute, stirring often.

  4. 4

    Add the carrot leafs & stems, fresh ground black pepper and mix well.

  5. 5

    Add the vegetable broth and the water, mix well, bring to boil and let cook uncover for 20 minutes.

  6. 6

    Transfer in blender or food processor to purée. Add water if too thick.

  7. 7

    Transfer back in pot to reheat.

  8. 8

    Serve hot and enjoy!
