I've used withered veggies that were in my fridge for a while and some vegetable scraps from other recipes I've made recently
Cooking Instructions

In a large pot, heat up the oil at medium/high heat and cook the onion for one minute, stirring often.

Add the zucchini and cook for another minute, stirring often.
- 3
Add the brocoli and the cauliflower and cook for another minute, stirring often.
- 4
Add the carrot leafs & stems, fresh ground black pepper and mix well.
- 5
Add the vegetable broth and the water, mix well, bring to boil and let cook uncover for 20 minutes.

Transfer in blender or food processor to purée. Add water if too thick.

Transfer back in pot to reheat.
- 8
Serve hot and enjoy!

I've been saving and freezing all my veggie scraps from cooking preparation for the past couple of months. Instead of throwing to the garbage the carrot & onion peels or bell pepper & zucchini stems, I put them in a large ziploc bag in my freezer. When the bag is full, or when you have no more room in your freezer because you've cumulated too many ziploc bags, it's time to make your broth! 😄😄 All veggie scraps are good to go in except for potato peels. Of course you, have to wash thoroughly your veggies if you want to do this, even if you eat organic. mfno -

I love soups. When making anything, I try to use as much fresh as possible. Especially Vegetables. Vegetable soup is one of my favorites. I would love to be able to always have it made so I could grab a soup mug or bowl full whenever I like. I always make 5-7 quarts of soup. I keep some out, place some in sandwich Ziplock baggies. This baggy makes one full bowl of soup. Candis Brooks
