Ingredients

  • 5.3 ozwide rice noodles (about 150 grams)
  • 2.5 ozpork loin, sliced (about 70 grams)
  • 1large egg
  • 1.8 ozChinese broccoli, cut into pieces (about 50 grams)
  • 1/4 teaspoondark soy sauce
  • 1 tablespoonminced garlic
  • 1/2 teaspoongranulated sugar
  • 1 teaspoonlight soy sauce
  • 2 teaspoonsmushroom soy sauce
  • 1 tablespoonvegetable oil

Steps

    Toss the wide rice noodles with the dark soy sauce until evenly coated, then set aside.

  2. 2

    Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry until fragrant. Add the pork and stir-fry until just cooked through.

  3. 3

    Add the seasoned noodles. Season with sugar, light soy sauce, and mushroom soy sauce. Stir-fry until everything is well combined.

  4. 4

    Push the noodles to one side of the pan. Crack the egg into the empty space and scramble until just set. Add the Chinese broccoli and stir-fry everything together until well mixed. Transfer to a serving dish and serve.
