Steps

Put butter, lemon juice, sugar and rind into a heat proof class bowl

Place over simmering saucepan of water stir with wooden spoon until dissolved for approx 5mins

Once all dissolved take off heat an whisk the 2eggs that are slightly beaten. Then back on heat for 8min or until it slightly thickens coats back of wooden spoon.

Set aside to cool add to ice-cream or insert into cupcakes so on enjoy
