Ingredients

  1. 6 cupsflour (about 750 grams)
  2. 1 cupbutter (about 225 grams)
  3. 1 cupcorn oil (about 240 ml)
  4. 1 cupsour cream (about 240 ml)
  5. 1egg
  6. 1 tablespoontoasted black sesame paste (tahini or black seed paste)
  7. 1 tablespoontoasted sesame seeds
  8. 1 tablespoonground mahlab
  9. 1 tablespoonground mastic
  10. 1 tablespoonground fennel seeds
  11. 1 tablespoonbaking powder
  12. 1 tablespoonvanilla extract
  13. Pinchsalt

Steps

  1. 1

    In a blender, combine the sour cream, egg, baking powder, and vanilla extract. Blend well.

  2. 2

    Melt the butter.

  3. 3

    In a large bowl, mix the flour with the salt, ground mastic, ground mahlab, toasted sesame seeds, and toasted black sesame paste.

  4. 4

    Add the corn oil and melted butter to the flour mixture. Rub together with your hands until combined.

  5. 5

    Add the blended mixture of sour cream, egg, baking powder, and vanilla extract to the flour mixture.

  6. 6

    Knead until all the ingredients come together into a smooth dough.

  7. 7

    Let the dough rest for 1 hour.

  8. 8

    Cut the dough and dates, then start shaping the cookies.
