Pandan Crepe with Young Green Rice Filling

Autumn is here, and so is the season for young green rice! I love the gentle green of the rice combined with the fresh green of pandan leaves. These two flavors, along with the aroma of milk, the richness of coconut milk, and the nuttiness of sesame, make for a delicious crepe! Crepe is a European dessert, but combining it with Asian ingredients is quite interesting! There are many crepe recipes, but I chose Chef Khu's—someone I've admired for a long time. Pandan Crepe with Young Green Rice Filling

Step 1: Make the crepe wrappers
- In a bowl, mix all the crepe wrapper ingredients together. Strain the mixture through a fine sieve to remove any lumps.

Heat a pan over medium heat and lightly brush with butter. Pour in a large ladleful of batter and swirl to coat the pan in a thin layer. Cook over medium heat so the batter doesn't burn.

Cook both sides until just set (do not overcook), then remove from the pan. Repeat until all the batter is used.

Step 2: Make the filling
- Rinse the young green rice with water, then steam it briefly. Do not let the water boil too much, as this can make the rice sticky. Stir gently while steaming. When the rice softens, it's ready. Transfer to a large bowl and mix in the sugar syrup and coconut milk. Then add the shredded coconut and toasted sesame seeds, mixing well.

Lay a crepe wrapper on a large plate, spread the filling in the center, and roll it up like a spring roll. Trim the ends, then cut in half and arrange on a plate.

Now you have a wonderful dessert! You can serve it with fruit sauces or chocolate if you like.
