Ingredients

  • FOR KOFTAS....
  • 3/4 cup Cauliflower
  • 1-1/2 cupCarrot..
  • 3/4 cupfrench beans, ,
  • Finely chop, blanch & crush these above vegetables
  • 1-1/2 cupGreen peas .
  • 5 Green chillies chopped
  • 4. Potatoes medium (boiled, peeled & mashed)
  • 1 tsp Red Chilli Powder
  • 1 cupBreadcrumbs
  • as neededOil for deep frying.
  • FOR GRAVY....
  • 4 tbsp Oil
  • 2 tbspGinger , finely chopped.
  • 2 Green cardamons
  • 2 tsp Cumin seeds
  • 200 grm,Bottle gourd peeled, cut in to cubes & boiled.
  • to taste.Salt
  • 2 tbspCoriander powder
  • 1/2 tspCumin powder
  • 1 cupFresh coriander leaves chopped
  • 2 tbsp Butter
  • 1" sticksCinnamon
  • 1 cup Fresh cream
  • 10Black peppercorns
  • 200 gmRed pumpkin, peeled, cut in to cubes & boiled.
  • 15 Ceshew nuts roasted
  • 2 tspRed Chilli Powder.
  • 1/2 tspTurmeric powder
  • 1 tsp Garam masala powder ,
  • 1/2 cup. Fresh mint leaves
  • 1 cup Tomato puree

Steps

  1. 1

    1. In a bowl add mixed vegetables, boild crushed potato, chopped green chillies, chopped ginger, red chilly powder & salt to taste. Mix well & make a dough. Make a small equal balls, give round shape like koftas.

    2. Heat oil in a pan & fry these koftas. Keep aside.

    4. In a grinder add this mixture & make a fine paste adding little water. Strained through strainer. Keep aside.

    3. Heat oil in a pan add cinnamon, green cardamoms, black peppercorns & cumin fry till fragrant. Add red pumpkin, bottle gourd, roasted cashew nuts red chilly powder, cumin powder, turmeric powder & garam masala powder & saute. Add fresh coriander leaves & mint leaves, mix well. Cook for 1 mnt. Cool it.

    6. In a serving dish add gravy & koftas. Serve hot

    5. Heat butter in a pan add add tomato puree cook for sometime. Add paste, boiled & cook on medium heat for 2-3 add salt to taste & saute. Add fresh cream, mix well.
