Ingredients

  • 8 ozbeef tenderoin thinly sliced
  • 1salt amd pepper to taste
  • 8 ozany asian noodle of choice or spagetti noodles
  • 8 cupchopped coarse bok choy
  • 1 lbwashed torn fresh spinach
  • 1/2 cuplight coconut milk
  • 2 tbspfresh lime or lemon juice
  • 2 tbspsoy sauce
  • 1 tbsprice vinegar
  • 1 tsphoney
  • 1oil as needed for cooking
  • 1 tbspminced garlic
  • 1 1/2 tspmadras curry powder
  • 1 tbsptoasted seasame seeds
  • 1 tbsppeeled chopped fresh ginger

  1. 1

    combine coconut milk,juice,soy sauce,vinegar,honey, whisk to combine

  2. 2

    cook noodles as directed on package keep warm

  3. 3

    heat oil in large saute pan season beef with salt and pepper sear in oil remove as done to a plate

  4. 4

    add bok choy and spinach to skillet and cook until wilted add ginger garlic amd curry powder cook a min or two add coconut milk mixture cook about 5 min

  5. 5

    add beef to heat through and serve over reserved noodles sprinkle with sesame seeds

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
