Steps

Mix maida,atta,salt,ajwain,ghee together and knead with water.

Make a tight dough rest for 15 min.

Now take small size dough and flatten it with roller(bailen) into a thin circle like chapati.

Sprinkle red chilli powder on it every where.

Roll it from one end carefully.

Cut the roll in equal size. Flatten all the pieces with roller.

Poke the rolled pieces with knife or fork.

Fry the prepared mathri in hot oil.

Keep the flame on medium heat. Fry it till golden brown.

Cool the mathri completely. They are ready to relish with tea or coffee.

Keep the extra mathri in air tight container.
