Ingredients

  1. 1 tbspvegetable oil
  2. 1/2 lbground beef or turkey
  3. 1 mediumonion, chopped (1/2 cup)
  4. 1/2 tspdried basil leaves, crushed
  5. 2 cupV8 Vegetable juice
  6. 1/4 tspgarlic powder
  7. 1/4 tspsalt , or to taste
  8. 1/2 cupuncooked regular long-grain white rice
  9. 2 mediumgreen peppers, cut into 1 inch pieces (2 cups)

  1. 1

    Heat the oil in a 10 inch skillet over medium heat. Add the meat, onion, and basil and cooked until the meat is browned. Stir often to separate the meat. Pour off any fat.

  2. 2

    Stir the juice and rice in the skillet. Stir in garlic powder and salt. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes.

  3. 3

    Stir the peppers into the skillet. Cover and cook for 10 more minutes or until the rice is tender and most of the liquid is absorbed.
