Soak urad dal overnight. Morning grind it to smooth and fine paste. With the help of whisker or hand aereate batter. Batter should be thick and able hold its shape. So use minimum or no water while making it. Keep it aside for 30 mins.

Till then make sugar syrup using sugar and water. Remove foam that comes on top. That is impurity from sugar. Cook it till it gathers one thread consistency. Take it off the flame. Add lemon juice which will stop forming crystals in syrup.

Now just befor frying add cornflour in batter and mix it with a help of whisker. And fill it in piping bag with small circular hole.

Heat ghee. Now will start making imarti. Make sure ghee is hot enough to make outside instant crispy. Now make two big circles and make small circles at the edge of two bigger circle. Do it in flow. Crisp it gently turn it. And immidiatly put it in sugar syrup.

Imarti is ready.
