Steps
- 1
Gently fry the sausages in olive oil until nicely browned.
- 2
Dice the onions and garlic whilst waiting for the sausages to brown.
- 3
Remove sausages from pan when ready and put to one side. Fry onions and garlic in pan until soft.
- 4
Cut the browned sausages into nice bite sized chunks and add to a heavy oven proof casserole dish or large saucepan.
- 5
Add the cooked onions and garlic to the sausages along with the 2 cans of chopped tomatoes.
- 6
Heat gently on the hob.
- 7
Place your various types of beans in boiling water and simmer for 5 minutes to soften, then drain and add to sausages.
- 8
Stir well, adding your herbs and salt and pepper. Simmer until the sauce thickens to your preference, stiring occasionally.
- 9
Put a lid on it and place into an oven at about 150 / 180°F C for 30 / 45 mins. Check occasionally to ensure that it does not dry out !
- 10
You should have enough for 6 people depending on how hungry they are! I like to serve this dish with green beans and massive chunks of crusty bread and butter. Enjoy !
