  5. 2 tspcrushed red pepper flakes
  6. 2 tbsptomato paste

  8. 6 cupchicken stock
  9. 8 ozmafalda or fusilli
  10. 1/2 cupbasil
  11. veggies
  12. 3 cupchopped onion
  13. 4 cloveminced garlic
  14. 28 ozcan fire roasted tomato
  15. cheese topping
  16. 8 ozricotta
  17. 1/2 cupgrated parmesean
  18. 1/4 tspsalt and pepper
  19. 1mozzarella

Cooking Instructions

    heat olive oil in large pot over medium heat

  2. 2

    add sausage in bite size pieces and let brown (takes about five minutes)

  3. 3

    add onion and cook until soft (about six minutes)

  4. 4

    add garlic, oregano and red pepper flakes, cook for a minute

  5. 5

    add tomato paste and cook for 3 to 4 minutes, tomato paste should be a rusty color

    add diced tomatoes, bay leaves, and chicken stock. bring to a boil, then reduce to a simmer for 30 minutes

    add pasta to soup and cook to al dente or cook pasta seperately to avoid mushiness

  8. 8

    while pasta cooks, combine all ingredients for cheese topping in a bowl

  9. 9

    when soup is done, ladel into bowl and add a dolep of cheese topping.
