Ingredients

  • 1 cupfresh pinapple (cut into very small cubes)
  • 1/2red onion (minced)
  • 1red pepper (very small cubes)
  • 1 cupcilantro
  • 1 cuppistachios finely chopped
  • 1 sliceof bread
  • 1salt and pepper to taste
  • 2 tbsphoney
  • 1 tspdejon mustard (optional)
  • 2bonless chicken breast

Steps

  1. 1

    preheat oven to 500°F

  2. 2

    In a bowl mix together pineapples, red onion, red pepper, and cilantro.

  3. 3

    In a processor or blender, blend pistachios and slice of bread until it becomes grainy.

  4. 4

    mix the honey, Dijon mustard, salt and pepper in another bowl.

  5. 5

    slice chicken breast in half (if thick). place the chicken in the honey/dijon mixture, remove and place into breading. place chicken in a non-stick baking dish or use cooking spray before placing the chicken.

  6. 6

    place chicken into the oven uncovered and turn the oven down 375°F. Cook for 20 minutes or until crust is golden brown and juices are no longer flowing.

  7. 7

    once chicken is cook pour a spoon full of pineapple salsa over chicken and enjoy
