
pistachio crusted chicken w/ pineapple salsa

preheat oven to 500°F

In a bowl mix together pineapples, red onion, red pepper, and cilantro.

In a processor or blender, blend pistachios and slice of bread until it becomes grainy.

mix the honey, Dijon mustard, salt and pepper in another bowl.

slice chicken breast in half (if thick). place the chicken in the honey/dijon mixture, remove and place into breading. place chicken in a non-stick baking dish or use cooking spray before placing the chicken.

place chicken into the oven uncovered and turn the oven down 375°F. Cook for 20 minutes or until crust is golden brown and juices are no longer flowing.

once chicken is cook pour a spoon full of pineapple salsa over chicken and enjoy
