first time I do it and it wasn't hard at all. just be careful the carrots are not so juicy otherwise it will be like scrambled eggs. but anyway, it tastes amazing!

peel and grate the carrots. keep them in a bowl. chop the onion thinly

preheat some olive oil on a pan and cook the onion for 4 - 6 minutes. then add the carrots and mix. cook it for 5 - 8 minutes. then put it aside.

mix the eggs on a bowl. beat them until they are spumous. add the carrot-onion mixture and mix

again preheat some olive oil on a pan (preferable, a Teflon pan ). add the mixture and cook it at low temperature for 5-8 minutes. then flip it and cook it for the same time.

caution. when you're frying the tortilla try to unstick the edges of the tortilla so it won't get stuck when you flip it.

now they're ready to be served. a good match would be with rise and some salad
