Ingredients

12 servings
  1. 1 1/2 cupchopped fresh/frozen strawberries
  2. 1/2 cupwhite sugar
  3. 1/4 cupwhite sugar
  4. 1/3 cupoil
  5. 2eggs
  6. 1 3/4 cupflour
  7. 1/2 tspBaking soda
  8. 1 pinchof salt
  9. 1/4 tspcinammon

Cooking Instructions

    In a small bowl combine strawberries and 1/2 cup sugar. Set aside for 1 hour in which the sugar will extract the liquid from the strawberries.

    Preheat the oven to 220ºC.

    Sift together the flour, Baking soda, cinammon, and salt. Set aside in a bowl.

    In a bowl beat together the eggs and 1/4 cup sugar for 1-2 minutes. Slowly add the oil while mixing.

    Add the strawberries to the egg mixture and stir into the mixture. Add the flour and fold until fully incorporated.

    Spoon the batter into prepared muffin cups.

    Bake for 18-20 minutes in preheated oven.

l followed recipe and mine came out burnt on top and mushy in middle. I did not use frozen strawberries but used fresh strawberries that I pick from farm. This could of made a difference . It just sucks that I made the effort to get fresdh strawberries and the recipe did not work for me.
