Just like when we used to make them together... I would turn the handle and she would cut and place them on the baking sheet.

Ingredients

  1. 2 2/3 poundsall-purpose flour
  2. 3 1/2 teaspoonsbaking powder
  3. 2 cupsbutter at room temperature (about 1 pound)
  4. 1 3/4 cupsgranulated sugar (about 12.3 ounces)
  5. 3large eggs
  6. 4vanilla pods
  7. 1 tablespoonbrandy
  8. 1/2 teaspoonbaking soda

Cooking Instructions

    Sift the flour with the baking powder in a large bowl and set aside until needed.

    In the mixer bowl, combine the butter, sugar, and vanilla, and beat with the paddle attachment very well for about 10 minutes. We want the butter to become very fluffy and light.

    Next, add the eggs one at a time, waiting for each to be fully incorporated before adding the next.

    In a small glass, mix the brandy with the baking soda and stir well to dissolve.

    Add this to the mixer and beat for another 3 minutes.

    Pour the mixture from the mixer into the bowl with the flour and mix initially with a spatula and then with your hands. Do not knead too much as this will make the cookies hard. We just want the flour to be incorporated into the butter mixture.

    The dough may seem soft, but do not add more flour as this will make them too firm. Just set it aside (not in the fridge) for half an hour, and then you can easily shape the cookies, or use cookie cutters. Of course, if you have a cookie machine, you can start right away! (That's how I used to make them with my grandma and still do...)

    Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F for about 20 to 30 minutes until they are lightly colored!
