This pasta salad is so versatile, it can be changed from a side dish to a main dish. Add diced ham and frozen peas, or broccoli florets.

This pasta salad is so versatile, it can be changed from a side dish to a main dish. Add diced ham and frozen peas, or broccoli florets.
Cooking Instructions

In a small bowl, whisk together balsamic vinaigrette, mayonnaise and sugar

Bring a large pot of salted water to boil, add pasta bring to medium heat and cook according to package.

When pasta is finished cooking, transfer to a large bowl and let cool
- 4
Once pasta is cool, add the tomatoes, mushroom, black olives, green pepper, pementos, salt and pepper to taste

Add the dressing, toss to combine.

Refrigerate for at least one hour allowing the flavors marry.
- 7
Sprinkle with cheese, toss lightly and serve.

We are coming towards the end of July and the weather has just completely gone crazy here in the Netherlands. Raining one day, Sunshine and hot the next, does not look like it wants to settle down to just Summer. Today, was a rainy day, a bit hot and humid, so salad was the wise choice to go with.This is a favorite of mine, such a light and tasty salad for summer eatings. The baked Prosciutto that I have added along with the Cantaloupe are so refreshing. As a topping for the salad I chose Almonds, Parmesan cheese and a lovely Balsamic dressing. I hope you enjoy it!!
