I used glass canning jars rather than a bowl, but next time will use bowl then transfer to jars. Excellent as a hotdog relish, and so pretty! Great crunch and very flavorful!

Ingredients

  1. 2 eachMedium sweet red, yellow and green bell peppers
  2. 1 largeRed onion, halved and thinly sliced
  3. 2 tspMixed pickling spices
  4. 1 tspCelery seed
  5. 1 cupSugar
  6. 1 cupWhite vinegar
  7. 1/3 cupWater

Steps

20 mins
  1. 1

    In large glass bowl, combine peppers and onion.

  2. 2

    In a small saucepan, combine remaining ingredients. Bring to boil, boil for 1 minute.

  3. 3

    Pour mixture into bowl through a fine mesh sieve. Discard spices.

  4. 4

    Refrigerate, covered, 24 hours, stirring occasionally.

  5. 5

    Can be refrigerated up to one month.

  6. 6

    Great as a hot dog relish!
