Ingredients

5 servings
  1. 4 lbBeef roast or venison roast
  2. 3 tbspOlive or canola oil
  3. 1Onion, chopped or halved and sliced
  4. 1 cupButtermilk (if you have none: 1 tbsp vinegar or lemon juice and enough milk to equal one cup. Stir and let sit 5 minutes)
  5. 4 tbspBeef bullion granules or 4 beef bullion cubes
  6. 1 cupWater
  7. 1/2 tspDried thyme
  8. 1/4 tspPepper
  9. 2 tbspCornstarch or flour

Cooking Instructions

    Brown roast in oil on all sides. Place in large slow cooker and top with onions.

    In same skillet, add buttermilk, water, bullion, thyme and pepper. Bring to simmer.

    Mix cornstarch with enough cold water to make a watery paste. Add to skillet and simmer/ stir until thickened.

    Pour gravy over roast. Cover and cook on low for 5-7 hours.

    I usually thicken the gravy after the roast is done by repeating the cornstarch water process before serving. Hubby likes his gravy thicker :)
    Serve with mashed potatoes!

The best venison roast I've ever cooked. Tender and delicious. A meal I would have been proud to serve anybody that stopped in to visit. Glad no one did, my wife and I are looking forward to hot roast beef (venison) sandwiches tomorrow. Only change I would make is to reduce the bullion next time. A little saltier than we like. Ditto to other comment, gravy was awesome.
