Ingredients

  • 1 cupwhite corn meal mix
  • 1/4 cupgranulated sugar
  • 1 cupfrozen whole kernel corn
  • 1/2 cupmilk
  • 6 slicepickled jalapeno peppers
  • 1eggs
  • 1 tbspvegetable oil

  1. 1

    Preheat griddle to 350

  2. 2

    In a medium mixing bowl, combine corn meal and sugar.

  3. 3

    Blend remaining 5 ingredients until chunky.

  4. 4

    Add blended ingredients to mixing bowl. Stir to combine.

  5. 5

    Scoop 1/4 cup of batter onto griddle. Cook 2-3 minutes per side, flipping once.

  6. 6

    Makes 6-8
