Ingredients

  1. 1 cupHeaping cup peanut butter
  2. 1 cupsplenda Brown sugar
  3. 1 largeegg
  4. 1 tbspvanilla extract
  5. 1 tspbaking soda

Cooking Instructions

    Preheat oven to 350°

    Mix all ingredients well with a mixer.

  3. 3

    Scoop dough on cookie sheets and make criss cross pattern with a fork.

  4. 4

    Bake 8-10 minutes until golden brown. Do not overcook.

But Splenda Brown Sugar IS sugar. Well, it's a blend of Splenda and regular brown sugar. I did the math. One batch of cookies is 192 grams of sugar. 2g per 1/2 tsp of Splenda brown sugar blend. There are 48 tsp in a cup. So for each tsp it's 4g sugar. 48x4= 192.
If you are trying to lose weight with low carb, you should stick to regular Splenda. I know, it's not as good, but you can't replace that yummy normal cookie taste and mouthfeel when you low carb, unfortunately. Sigh. Maybe someday someone will invent low carb cake and cookies that taste more like what we miss. It in my case, those things are what got me in trouble in the first place. 😊
