Coconut Pancakes

I have tried the egg/banana pancake before, and like others, I found it a bit too eggy to be an enjoyable pancake, more of a banana omelette. Inspired to buy the extra ingredient by the recipes of my friend Shobs, I used it and it worked. The coconut milk powder is flour/fat. Yum.

I have tried the egg/banana pancake before, and like others, I found it a bit too eggy to be an enjoyable pancake, more of a banana omelette. Inspired to buy the extra ingredient by the recipes of my friend Shobs, I used it and it worked. The coconut milk powder is flour/fat. Yum.
Steps

Mash the banana in a bowl

Add coconut milk powder and the egg
- 3
Mash/whisk until pretty much lump free

Heat a skillet on medium low, make sure it is heated
- 5
Measure the oil out and brush a little bit over the skillet
- 6
Pour out two or three pancajes into the skillet (I use a small funnel for this, but pouring from a jug would have the same general effect...)

Cook on one side until the edges look set, then carefully flip the pancakes

Cook on the other side for a minute

Make the rest of the pancakes if necessary.

Serve with yogurt, and fruit, if desired.
