  1. 4pork shoulder blade chops
  2. 1 cupmojo marinade
  3. 2 tsproasted and ground coriander
  4. 2 tsproasted and ground cumin
  5. 2 tspdried Mexican oregano
  6. 1 tsponion powder
  7. 1 tspgarlic powder
  8. 1 tsppaprika
  9. 1 tspground white pepper
  10. 1/2 tspcinnamon
  11. 1 pinchsalt
  12. 1vegetable oil; as needed

  1. 1

    Marinate chops in mojo marinade for 4-48 hours. Pat dry.

  2. 2

    Toss chops with enough oil to cover. Season with dried spices. Grill on each side briefly until desired doneness.

    Variations; Tequila, smoked paprika, thyme, mole marinade, cayenne, ancho or chipotle chile, lime
