My weekly shopping was not done yet so I didn't have much available to make a quick and easy lunch so I came up with this. You can turn this into a dry dish using less water.

My weekly shopping was not done yet so I didn't have much available to make a quick and easy lunch so I came up with this. You can turn this into a dry dish using less water.

Heat the oil and bacon fat and added the onion, fry the onion for about 2 minutes over a medium heat.

Add the rest of the vegetables (not the coriander). Fry for about 3 minutes or until the vegetables become soft. Stir often.

Add the hot dogs and Worcestershire sauce and fry for a further 2 minutes.

Add the rice and water and bring to the boil, with lid on.

Next add the the granules and salt. Cook the rice for around 10 minutes. If it becomes too thick after adding the granules add more water if desired.

Add in the coriander and Continue to cook until done.

Check seasoning and serve. You can serve this as a thick soup or just as rice depending on how you prefer to have it.
