Beat the margarine / butter with the sugar til it is white/ off white. This makes the cookies more fluffy

Beat the egg separately then gradually add it to the mixture. Add the vanilla essence

Add the salt to the flour and sieve them.

Add the flour to the mixture gradually. Add flour as needed making a dough.

Preheat the oven to 180C

Roll out the dough to 1/4 inch thickness and cut out desired shapes

Line the baking pan with a baking sheet and lay the cut out pieces of dough. If you don't have a baking sheet, rub some margarine on the baking pan and coat it with some flour

Bake for 8 to 10 minutes
