Ingredients

  1. 1 tbspof olive oil
  2. 1beef shortribs
  3. 1 lbof mushrooms, sliced
  4. 1salt & pepper to taste
  5. 2whole carrots cut in half
  6. 1whole unpeeled large onion
  7. 2ribs of celery, cut in half, with leaves on
  8. 1 tbspfresh thyme
  9. 2 cupbarley

Steps

  1. 1

    Heat olive oil in a stock pot, add beef brown on all sides. Season with salt & pepper.

  2. 2

    Add mushrooms, carrots, celery & onion, add broth, season with salt & pepper, add thyme.

  3. 3

    Bring to boil, then turn down heat to medium low. Cook until beef ribs are cooked.

  4. 4

    Add barley cook until tender.

  5. 5

    Reason with salt & pepper if needed.

  6. 6

    Enjoy.
