Ingredients

  1. Wraps
  2. 4Chicken Breasts [cubed]
  3. 1/2 largeEach: Green - Red - Orange - Yellow Bell Peppers [chopped]
  4. 1 mediumWhite Onion [chopped]
  5. 1 largeJalapeño [chopped]
  6. 1 canBlack Beans [drained]
  7. 1 cupFresh Cilantro
  8. 1/2Tomato [diced & deseeded]
  9. 1/3 cupCorn
  10. 3 tbspSalsa [your choice]
  11. 1/2 tspCayenne Pepper
  12. 1 tspChili Powder
  13. 2 tbspFresh Garlic [crushed & chopped]
  14. 1 tspCumin
  15. 1 largeBag Mexican 3 Cheese Or Pepper Jack
  16. 86" Flour Tortillas
  17. Sides & Garnishments
  18. 2 largeAvocados [sliced]
  19. 2 largeLimes [quartered]
  20. 1Reserved Fresh Cilantro
  21. 1Reserved Bell Peppers
  22. 1Reserved Cheese
  23. 1 tubSour Cream
  24. 1Bottle Salsa
  25. 1Guacamole

Cooking Instructions

    Reserve some of your Bell Peppers, Cilantro and cheese for toppers and garnish.

    Add everything under Wraps section in a large non stick pan with 1 tbs oil. Fry until chicken is fully cooked.

    Generously pile cheese on Tortilla.

  4. 4

    Add chicken mixture on top of cheese.

  5. 5

    Top with cheese again.

    Roll Tortilla and secure with a toothpick. If using egg roll wraps, coat outer sides with egg wash to seal. [two eggs beaten]

    Spray Pam dish and place side by side.

    Cover with cheese and garnishments.

    Bake in a 350° oven for 25 minutes. If using egg roll wraps, turn once during baking.

    Pull out toothpicks!

    Cut wraps at an angle and serve.

    Authors Note: Since there were some allergies a few picky eaters, I wasn't able to add all the ingredients listed in the photo. Enjoy!
