Hambagu (Japanese Hamburger Steak)

🍔The meat used as a filling in hamburgers is called 'hambagu' in Japan. 🍴It's eaten similarly to steak, but hambagu is made with ground meat, making it tender and smooth. 👅 There are many ways to make it, and this is one of the many recipes... but it's delicious and easy to make! 🍖

Steps
- 1
Finely chop the onion ➡ Sauté until translucent and fragrant ➡ Set aside
- 2
Bowl 1⃣: Season the ground beef with salt and add the sautéed onion ➡ Bowl 2⃣: Mix breadcrumbs, milk, and egg together ✨Combine the contents of Bowl 2⃣ with Bowl 1⃣ ➡ Chill in the refrigerator for about 5-10 minutes (this step makes it easier to shape and prevents it from being too runny) ✨If you prefer it softer, use more milk; if not, use more breadcrumbs
- 3
After chilling, shape the meat into palm-sized portions, making 2 pieces ✨Before shaping, coat your hands with vegetable oil to prevent sticking
- 4
✨Shaping method✨ 1⃣Divide the meat evenly for 2 pieces 2⃣Shape into round balls 3⃣Toss the meat between your left and right hands to remove air (similar to playing badminton) 4⃣Place on a cutting board and shape into ovals 5⃣Finish shaping both pieces before frying in the pan so they cook evenly
- 5
🎉Once ready, place in a hot pan. When the meat starts to brown, reduce to medium-low heat. Do not flip yet ➡ Cover with a lid (this steams the meat). When the aroma intensifies or after about 5 minutes, flip the meat
- 6
After flipping, cover and continue steaming until cooked through ✨Keep the heat at medium-low during this step; only use high heat initially ✨You can poke the center with chopsticks to let the juices flow out, which can be used for the sauce... but some prefer not to poke, letting the juices flow when eating... aromatic and delightful😍 Some want it to cook faster, so they press the center to make a dent before frying
- 7
As it steams, juices will start to flow ➡➡ Once the meat is cooked, plate it and let's make the sauce 👍
- 8
🍅How to make the sauce🍅 Don't discard the juices from the meat. Option 1⃣: 'Ketchup Sauce' ➡ Add 1/2 or 1 small piece of butter, a little chicken broth, and 3 tablespoons of ketchup to the pan and mix until well combined. When the sauce darkens, it's ready 👍 Option 2⃣: 'Japanese Style Sauce' Save a little of the sautéed onion from step 1 ➡ Add butter, onion, 2 tablespoons soy sauce, and 1 tablespoon mirin. Mix well 🐝🐝 Taste and adjust seasoning as desired

It's great with a side salad 😘😘😘 Give it a try!
