  1. salad
  2. 1 largegreen tomato
  3. 1/3 cupRadicchio
  4. 2 mediumzucchini
  5. 1/3 cupfennel bulb
  6. 1 tbspred wine vinegar
  7. 3 tbspmargarine
  8. spices
  9. 1 tspsweet basil
  10. 1 tspchopped cilantro
  11. 1/3 tspsalt
  12. 1/4 tspgranulated garlic powder
  13. dressing
  14. 2 tbspred wine vinegar
  15. 2 tbspolive oil, extra virgin, the thick first pressing

Steps

  1. 1

    In a pan heat the margarine. When melted add zucchini sliced in medallions.

  2. 2

    Chop the radicchio and fennel bulb. Add to zucchini. Add the spices.

    Chop the green tomato stir fry. After 2 minutes add 1 tablespoons of red wine vinegar. When the liquid dissappears, its done

    Dress with olive oil and red wine vinegar
