Ingredients

  1. 1 smallonion
  2. 3 tbspgarlic, minced
  3. 3 ozsliced black olives
  4. 115oz can plain tomato sauce
  5. 115oz can Traditional low sodium Italian seasoned tomato sauce
  6. 3Tbsp's oregano
  7. 2Tbsp's thyme
  8. 1 tbspItalian seasoning
  9. 1 dashsalt
  10. 1 tspblack pepper
  11. 1 largespaghetti squash

Steps

  1. 1

    Place whole spaghetti squash in microwave and cook for one minute. Remove and cut in half lengthwise. Remove all seeds and membranes.

    Place squash cut side down in a 13x9 casserole dish. Add 1 1/2 Cups water. Bake 30 minutes at 350°F Fahrenheit.

    Meanwhile, sauté onion for 5 minutes. Add garlic and sauté another minute. Transfer onion mix into a pot.

  4. 4

    Add all seasonings, salt and pepper. Stir. Add the tomato sauces. Mix.

  5. 5

    Bring to a boil, then lower heat to low or medium low. Simmer 30 minutes, stirring occasionally.

  6. 6

    Test squash tenderness with a fork. Should be al dente. Once done, remove from casserole. With fork, scrape squash to create "spaghetti strands."

  7. 7

    Serve in large bowls. Top with sauce.
