This makes a wonderful lunch and a great appetizer cut in half or thirds. I use fresh bakery baguette rolls cut in half because we like the crispy top but the touch of softness that remains underneath. Slices of french bread can be used for a totally crispy toast!

Ingredients

  1. CRAB SALAD
  2. 1 lbjumbo crabmeat
  3. 1stalk of celery, finely chopped
  4. 2 tbspchopped chives
  5. 1 tspfresh lemon juice
  6. 1fresh jalapeno, seeded and finely choppec
  7. 1/3 cupmayonnaise
  8. 1/4 tspblack pepper and salt to taste
  9. 1 tsphot sauce, such as Franks red not
  10. CROSTINI
  11. 4baguette french rolls, cut in half, or slices of good french bread
  12. 2 tbspbutter, salted or unsalted, melted
  13. 2 tbspgood olive pile
  14. 1clove of garlic, finey minced
  15. 1/4 tspblack pepper and salt to taste
  16. 2 tbspgrated romano cheese
  17. 1/4 lbthin sliced,deI honey ham
  18. 1 cuptorn Boston lettece
  19. GARNISH
  20. 16more or less of grape or cherry tomatos

Cooking Instructions

    Preheat the oven to 425. Line a baking sheet with foil.

    MAKE CRAB SALAD

  3. 3

    Combine all crab salad ingredients in a bowl, mix gently to combine. Chill

  4. 4

    Place baguette halfs on foil, cut side up

  5. 5

    In a small bowl combine melted butter, olive oil, garlic,pepper, and romano cheese, mix well.

    Brush baguette tops with butter/oil.mixture

  7. 7

    Place in preheated oven until golden and crisp about 15 to 18 minutes

    ASSEMBLE CROSTINI

  9. 9

    Spread each toasted bread evenly with crab salad, add lettuce on top.of crab salad.

    Wrap ham around crostini as shown

  11. 11

    Serve with the grape or cherry tomatoes

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
