Steps

Wash and slice peppers into halfs... remove seeds and all white flesh...

Place peppers skin side up under grill on high heat until skins blacken...

Place peppers in a bowl to cool and cover with cling wrap... covering them will make them sweat and the skins will peel off easy...

Peel off burn skin...Slice peppers flesh to desired size... I prefer thin strips... lightly season with salt.

Place peppers in hot sterilized jars.... layer garlic, oregano and chillies in between.... top up with oil... seal jars tightly.

These will keep for months until opened... once jar opened must be eaten...
