Steps

Add cauliflower and chicken stock to a medium-sized saucepan and simmer on medium-high heat for 10 minutes or until cauliflower is tender.

Add in the milk and roasted garlic cloves. Season with salt and pepper to taste. Transfer to a mixing bowl. With a hand held mixer, mix cauliflower mixture till well blended. Add in cheese and chives. Serve immediately.
