Ingredients

  1. 1 tbspOlive oil
  2. 1/2 cancorn
  3. 2 clovegarlic, minced
  4. 2 1/2 tbspfresh ginger, minced
  5. 2 lbraw medium shrimp, peeled and deveined
  6. 1 canblack beans, rinsed and drained
  7. 1 tbspbutter
  8. 3/4 cupgreen onions, chopped
  9. 1salt and pepper to your taste
  10. 1 bagof prepared salad
  11. 2tomatoes cut into wedges
  12. 1/4 cupfresh cilantro, chopped
  13. 3 tbspchopped toasted cashews
  14. 1/2 tspsugar
  15. 1a pinch of paprika for each plate

Steps

  1. 1

    Heat oil in a large frying pan over medium heat. Add corn, garlic, and ginger, saute for 3 minutes without over browning.

  2. 2

    Add shrimp and saute for another 3 or 4 minutes.

  3. 3

    Add beans, butter, and sugar. Cook for another 3 or 4 minutes, stirring frequently.

  4. 4

    Remove from heat, and fold in salt pepper and green onions.

  5. 5

    divide salad onto 4 plates, spoon the shrimp mixture over the salad. Garnish with tomatoe wedges, and sprinkle with cashews, paprika, and cilantro.
